Domaine de la Pepiere ‘La Pepie’ Cabernet Franc 2022 750ml

The wine is classified as a Vin de Pays du Val de Loire as there is no allowance for red wine in the Muscadet AOC. Côt used to grow in the Nantes area’s vineyards during the 20’s and 30’s but has largely disappeared since then. These were replanted with old vines from Clos Roche Blanche in Touraine. In all, 1.35 hectares were planted by Marc in 2000, 2005 and 2008.

The grapes are destemmed and macerate for a week. A four day cold fermentation with indigenous yeast is carried out before maceration. Only the free-run juices are kept for this cuvée. There is a five month maturation in stainless steel. S02 additions are three grams per hectoliter after malolactic fermentation.
